About this winery

Good friends Thierry (renowned French winemaker) and Guy (British wine industry rebel) created FAT bastard almost by accident. It started out as an experiment Thierry had going in the back of his cellar, leaving a barrel “on the lees” (yeast cells). He didn’t know what to expect, but when he and Guy tried the wine, Thierry exclaimed, with a strong French accent, ”Now zat iz what you call eh Phet bast-ard!” This very British expression perfectly described the wine’s wonderful color...

Production notes

The Chardonnay grapes are sent to the crusher-destemmer where they undergo brief contact with the skins in order to enhance the fruit character of the wine. The grapes are gently pressed and the wine is fermented with selected yeasts at a controlled temperature in stainless steel tanks. To maintain vibrant acidity, malolactic fermentation is not carried out and the wine is aged on the lees to give it a solid structure. Part of this wine is oak-aged before bottling.

Tasting notes

Fat Bastard Chardonnay is a rich wine with complex aromas of pear and apple, with a hint of butter. The round and elegant palate offers floral and fruity flavors, with a balanced and fresh finish. Pairs beautifully with: herb-roasted chicken, pork skewers, or scallops in cream sauce.
