Production notes
Fermentation in temperature-controlled stainless steel vats for between 3 weeks and 2 months, followed by aging on lees for a further 2 months.
Tasting notes
The rules of the Alsace AOC prohibit mentioning the grape varieties used in the blend on the label. The Illégal RPG cuvée humorously references this rule. Riesling (R) brings its characteristic freshness, marked by notes of citrus and white flowers. Pinot Gris (PG), meanwhile, enriches the whole with fruity and spicy flavors, evoking yellow plum and quince. A dry, balanced, and particularly versatile wine.
