Production notes
Cold maceration for 24 hours, with temperature control, and spontaneous alcoholic fermentation in 5,000-liter French oak foudres. After about 10 days of fermentation, we add 20% of the whole bunches harvested 10 days later, thus achieving greater ripeness in the stems and preventing greening. At this point, a kind of semi-carbonic maceration occurs. We do not add CO2 because it is already present in the foudre from the fermentation that has begun. With this method, the final wine has a natural protection, allowing us to produce it in the most natural way without added sulfur.
Tasting notes
Bright cherry color. Juicy, lively, and succulent, with vibrant fruit flavors and floral fragrances. Alongside these perfumed characters, there is freshness on the attack and a smooth texture. The focus is on the fruit, creating a distinctive range of flavors, with notes of banana, strawberry bubblegum, cinnamon, and kirsch.
