Production notes

Fermentation takes place in 6,000-liter stainless steel vats to extract the best quality from the grapes, color, and aromas. Contact with the skins lasts 2 to 3 weeks with temperature control. Alcoholic fermentation is spontaneous with light pumping over for 5 weeks. The wine is then pressed and placed in used French oak barrels where malolactic fermentation takes place.

Tasting notes

Intense, clean aroma with strong fruit notes (plum, strawberry, black cherry, blackcurrant). Elegant, crisp palate with hints of rosemary and cedar emerging as the wine develops. It offers tart flavors of blackberry and sour cherry with a hint of licorice. Smoother on the finish, there is an intense burst of red fruit and herbaceous notes (thyme/rosemary). Smoother on the finish, an intense explosion of red fruit and herbaceous notes (thyme/rosemary) emerges.
