Production notes

Total destemming, no crushing, fermentation with indigenous yeasts, minimal pumping over. Extraction is carried out through a long, gentle infusion process, with fermentation temperatures not exceeding 26°C. Wine is lightly sulphited before bottling, with a maximum total SO2 content of 35mg/L. (Natural) Aging ⅓ barrels and ⅔ concrete tanks. Aging potential of 5 years.

Tasting notes

Cocoa aromas balanced by fruity notes of black cherries and raspberries. On the palate, it is smooth, balanced by refreshing acidity and enveloping tannins.
